Tasty pulled chicken tacos

Who loves Mexican food?(raises hand) I don’t think I have ever met a taco I didn’t like. I also love a simple meal with easy clean up. If you do too, these are the tacos for you!!

Chicken ingredients:

  • 4-6 chicken breasts
  • 1-12oz fresh salsa Fresca (refrigerator section of grocery store)
  • 1-12oz fresh pick de gallo (same place as salsa)
  • 1 small can green chilis
  • 1-2 Tbsp chili powder
  • 2 Tbsp cumin powder
  • Salt and pepper to taste–I used chipotle salt grinder for an extra smokey taste added

Lime crema:

  • 8oz sour cream
  • Zest of 1 small lime
  • Juice of 1.5 small lines or 1 large
  • 1/2 tsp chili powder
  • Salt/pepper to taste

Black beans:

  • 2 cans-rinsed-black beans
  • 1/3 onion- red or yellow whichever you prefer
  • 1 garlic clove- I love the garlic press if you don’t have one finely mince
  • 1 cup chicken or beef broth 
  • Salt/pepper to taste

Directions for chicken:

  1. Buy your chicken or take it out of your freezer.
  2. Make sure your crock pot is clean and working
  3. Put salsa Fresca in crock pot- turn to high.
  4. Add chicken (my chicken was half frozen)
  5. Add pick de gallo
  6. Add spices
  7. Let cook for 5 hours on high– mine was par frozen, if yours isn’t it will take less time
  8. Turn to warm until ready to eat.
  9. In the crock pot with two forks pull chicken apart, it should fall apart easily!

Directions for crema:

  1. Put sour cream in a bowl
  2. Zest that lime and put it in that bowl!
  3. Juice your limes, combine with other ingredients. 
  4. Add chili powder, salt/pepper to taste.

Directions for beans:

  1. Open beans and rinse and drain in a colander.
  2. Put onions and garlic clove in olive oil in a medium sized pot.
  3. Add beans and broth.
  4. Cook on medium heat for 20-30 minutes.

I served with taco shells, pico de gallo, shredded cheddar cheese and Trader Joe’s frozen roasted corn.
